WildFlour Artisan Bakery is the culmination of years at the local Farmers Market where Lori sold cookies, cakes, and pies. In 2012 she decided to extend her skills and attended the Artisan Bread School 5-day course taught by renowned baker and teacher Carl Shavitz. After that class, she started selling sourdough bread and Italian favorites focaccia and ciabatta. Lori then began honing her skills using laminated doughs and offering her customers puff pastry and croissants. Deciding to expand still further she added sticky buns, macarons and other French pastries. In the six years she was at the Farmers Market her customer base grew. In December 2016 she was offered the opportunity to sell her pastries from a brick and mortar building in her hometown of St. Paul. She took the huge leap of resigning her full-time job and opened WildFlour Artisan Bakery.
Even though WildFlour is only opened on Saturdays, it has grown by leaps and bounds. Customers drive from surrounding counties, sometimes an hour away to enjoy Lori’s cakes and pastries.
Lori’s accomplishments include assisting Carl Shavitz in numerous Artisan Bread School courses across The United States, Canada and Europe. She also teaches French Macaron Classes and hosts Sunday Suppers, a reservation only dinner with family style seating. WildFlour Artisan Bakery has been a part of The Taste of Shelby County since its inception in 2015. She’s won People’s Choice Award in 2015, 2016, 2018 and 2019. And won Best Dessert in 2017 and 2018.
